For 60 years, Timber Cove Resort<\/a> has been perched on the border of Sonoma and Mendocino counties, acting as a gateway to California\u2019s wild Northern coast and the rich bounty that it brings.<\/p>\n

Timber Cove was built in 1963 as a self-proclaimed \u201cplace of meditation and tranquility.” The property sits on 25 unrivaled acres along the stunning Sonoma Coast and offers a uniquely captivating hospitality experience with midcentury accents, warm hues, and sturdy timbers. It\u2019s a timeless space that seamlessly blends into its surroundings and having a deep appreciation and love for the resort, I was pleased to be able to attend its 60th anniversary celebration. It took place over a full week (July 25th – July 29th, 2023) and included a wonderful line up of events that included fireside chats, yoga classes, hiking excursions, wine tastings, etc. On the last evening, I had the immense pleasure of attending Timber Cove\u2019s 60th Anniversary Dinner with Wayfarer Vineyard and Chef Dustin Valette.<\/p>\n

It was an evening to remember as one of my favorite resorts and favorite local chefs combined forces.  Hosted at Coast Kitchen located onsite at the resort, the event saw a menu curated and prepared by Chef Valette (of the restaurants, Valette and The Matheson in Healdsburg).<\/p>\n

The four course dinner started with Valette Estate Osetra Caviar with buttermilk brioche and whipped cr\u00e8me fra\u00eeche. It offered a refined and indulgent experience and paired perfectly with 2020 Wayfarer Estate Fort Ross-Seaview Chardonnay.<\/p>\n

To follow was Liberty Farms Duck with sous vide breast, confit pave liver, pickled dried cherries and cocoa nibs. This dish featured a symphony of rich and contrasting flavors and it paired delightfully with 2021 Wayfarer Estate Fort Ross-Seaview Pinot Noir.<\/p>\n

It doesn\u2019t get much fancier than the Wagyu Beef Duo entree – Butter Poached New York & 400 Day Bushi with smoked potato mousseline, shaved truffles and mushrooms fondue. Not one, but two wines accompanied this entree: 2014 Wayfarer Estate Fort Ross-Seaview Golden Mean Pinot Noir and 2014 Wayfarer Estate Fort Ross-Seaview Mother Pinot Noir. <\/p>\n

After a hearty meal, I somehow saved room for dessert. Set before me was a Dark Chocolate Pav\u00e9 with white chocolate snow, burnt caramel and toasted hazelnuts. It provided a luxurious and unforgettable experience that will satisfy any chocolate lovers craving. It paired nicely with the 2014 Wayfarer Estate Fort Ross-Seaview The Traveler Pinot Noir.<\/p>\n

After an exquisite dinner, we made our way back to our ocean view room overlooking the beautiful Sonoma coastline. I turned on the Crosley record player and played some smooth tunes while snuggled up next to the fireplace. <\/p>\n

The following morning, I rose with the sun and enjoyed a cup of coffee on my private redwood deck overlooking the deep blue Pacific Ocean. I peered up at Benjamino Bufano’s iconic 93 foot Peace Obelisk that soars 93-feet above and took in the moment.<\/p>\n

Overall, Timber Cove is one of my favorite resorts in California and many fond memories have been made there. It’s location, heritage, rooms and restaurant keep me coming back for more time and time again. I\u2019m not the only one though – 60 years of guests proves they have the equation for the perfect hotel down to a science!<\/p>\n
